  • Thinly sliced ribeye is the meat of choice for a classic Philly cheesesteak. The marbling of ribeye is perfect because it makes the sandwich tender and easy to bite. Slice the beef very thinly so you can quickly sauté it. You can have your butcher chop it fine for you, or you can do it yourself. A fantastic way to thinly slice beef is to cut it frozen: freeze your ribeye for about 30 minutes, then slice it with your sharpest knife. You can add the frozen beef to the pan. 
  • The original Philly Cheesesteak had no cheese at all. Later, Provolone was added. Provolone cheese is the best choice for a Philly cheesesteak due to its neutral flavour and melting qualities. Sliced white American cheese is the second most popular option. If you use Provolone, opt for the soft deli kind and avoid aged Provolone, as it tastes too strong and overpowering.

There’s nothing like Friday night, jammies and carbs with cheese, am I right? This Easy Philly Cheesesteak Bread is a cinch to make, in fact it’s faster than pizza!

Ingredients

  • 1 Loaf Bread, Italian or french, sliced open
  • 1 Ribeye Steak, Large, placed in the freezer
  • 2 Bell Peppers, Green, sliced thin
  • 1 Onion, sliced
  • Tillamook 3 Cheese Sauce Starter
  • Pepper
  • Salt

Instructions

  • Remove the inside of the bread, leaving a thick layer on the bottom so juices don’t soak through.
  • Remove the steak from the freezer and slice thin.
  • Heat a
    cast iron skillet over medium high heat and throw in the steak. Sprinkle with salt and pepper (remember to read our tip about salt in the post), moving the meat with tongs as it quickly cooks. Remove to a plate.
  • Turn the pan to medium and add a drizzle of oil. Add the peppers and onions and cook, stirring occasionally until tender.
  • In a separate pot, cook the sauce according to directions.
  • Toast the bread under a broiler, add the meat and veggies and top with sauce!

  • Slider rolls – Hawaiian sweet rolls are a go-to for all of the best slider recipes, but if you can’t find those any slider size buns will work.
  • Thinly sliced steak –
  • Seasoning – Kosher salt, black pepper, garlic powder, and onion powder are all you need to give a great flavor to your steak.
  • Green pepper – Green bell peppers are a must! We like to do a mix of green and red bell peppers on our Chicken cheesesteak sliders.
  • Onion, diced
  • Provolone cheese – We like our steak and cheese sliders with slices of provolone cheese on top, but if you want to do it the authentic Philly way you’ll want to pour some Cheez Whiz on top!
  • Mayonnaise – I love a little mayo on my cheesesteak slider. Spread a thin layer on the top and bottom bun.
  • Butter – This is melted and brushed over the bread to give it a delicious, toasted flavor.
  • Onion – Finely mince some fresh onion, preferably yellow onion or white onion, and add it to the melted butter.

  • 1/4 cup olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 medium onion, sliced
  • 1 green pepper, sliced

  • 1 pound top sirloin steak, sliced
  • 3 slices provolone cheese
  • 6 gluten-free rolls

Instructions

  • Preheat the oven. Preheat oven to 400 degrees.
  • Combine the marinade. Whisk together oil, garlic powder, salt, and pepper.

  • Combine the veggies and oil mixture. Place sliced onions and peppers in a medium-sized bowl.  Stir in the oil mixture.

  • Build the foil packs. Distribute steak evenly on 6 sheets of tin foil. Top with veggies and roll up foil packets.
    1 pound top sirloin steak, sliced
  • ️Bake. Bake, cook on grill or campfire, for 15 minutes or until steak is cooked to your preferred doneness.
  • ️Add the cheese. Carefully open foil packets and place 1/2 a slice of cheese on top.  Close the foil packet and let the cheese melt.
    3 slices provolone cheese
  • Serve. Place steak, veggies, and cheese on top of a hard roll and drizzle with the remaining juices.

Why is it called a “Philly Cheesesteak”?

All good sandwiches have a legendary origin story, and the Philly Cheesesteak is no different…

Legend has it that the cheesesteak sandwich originated at what is now Pat’s King Of Steaks in – of course – Philadelphia, back in 1930.

Pat Olivieri had a hot dog stall, and the workers would line up daily for them. He would sell them hot dogs off his little cart on the street. And then one day Pat wanted something different for lunch; he was tired of the hot dogs. 

So he asked his brother to go down to the butcher and pick up some scraps of meat. When he came back, Pat cooked it up on the flatplate and put it on a hot dog roll with some cheese. 

There was a cab driver there who saw the sandwich, thought it looked amazing and asked for one too. Pat told him he only had enough beef for one sandwich, so they split it. The cab driver raved about it, and told Pat to stop selling hot dogs and sell that instead. 

And that was the invention of the steak sandwich. Some places now sell it with grilled peppers, mushrooms and/or onions too, but the original was exactly how the name describes it.

I’m impressed how popular this Philly Cheesesteak bloomed on Pinterest! It’s a fairly new recipe but is becoming one of our most loved recipes! I don’t blame all the bold reviewers, because it is one of the most fascinating sandwich recipes if you love Philly fresh cheesesteaks!

One of our readers named Kimberly was born and raised an hour west of Philly and said, “the only ingredients in a Philly Cheesesteak are thinly sliced steak, fried onions, and cheese, that’s it!” So, whether you like a Cheez Whiz Philly Cheesesteak or grew up in the south of Philadelphia, the best Philly cheesesteak comes down to the beef. A steak and cheese sandwich is all about the tender shavings of meat and simple toppings like sauteed onions and cheese, which is enough for a Geno’s or Pat’s craving (one of the most popular Philly Cheesesteak Restaurants in Philadelphia!)

Philly Cheesesteak Sliders

These Philly Cheesesteak Sliders are filled with peppers, onions and stringy provolone cheese. Perfect for game day!

Ingredients

  • 12 Slider rolls
  • 1 pound Thinly sliced steak
  • 1/2 teaspoon Salt
  • 1/2 teaspoon
  • 1/2 teaspoon
  • 1/4 teaspoon Black pepper
  • 1 Green pepper, diced
  • 1 Onion, diced
  • 6 slices Provolone cheese
  • 2 tablespoon Mayonnaise
  • 3 tablespoon Butter, melted
  • 1 tablespoon Onion, finely diced

Instructions

  • Preheat oven to 350°F
  • Separate the tops and bottoms of your rolls and place the bottoms in an 11″ x 7″ baking dish or on a baking sheet. Prep the bread by spreading a thin layer of mayo on the tops and bottoms of the rolls.
  • Cook the steak meat in a skillet, adding salt, pepper, garlic powder, and onion powder. When done cooking drain off any excess liquid and set aside.
  • Saute the pepper and onions until they are tender. Drain off any excess liquid and set aside.
  • When the meat, onions and peppers have finished cooking spread the steak, then peppers and onions evenly over the bottom pieces of bread in the baking dish.
  • Place a layer of provolone cheese over the peppers and onions.
  • Place the top pieces of bread on top of the cheese.
  • In a small bowl combine melted butter and 1 tablespoon of finely diced raw onions. Then brush the tops of the bread with the butter mixture.
  • Cover with foil and bake for 10 minutes, then remove foil and continue baking for another 10 minutes (or until cheese is melted).
  • Cut and serve.

And really, that’s all. Having thus examined three incredibly simple ingredients we’ve got all we need to craft a perfect Philly Cheesesteak. What? That’s it? Well…

It’s not that you can’t add other ingredients to a cheesesteak and it’s not that a lot of people don’t… As with so many other great sandwiches, the customization options are pretty much endless, but if you want to keep it real, and keep it Philly, you’ll keep it pretty fucking simple. So, for once in a blue moon, we’ll keep it short, simple and to the point on this blog and simply use this space and opportunity to inform you that popular yet highly optional additions for cheesesteaks include (amongst others):

  • Caramelized onions (which despite being a part of the original mix is now, strangely enough, technically considered an optional ingredient)
  • Mushrooms
  • Bell Peppers

And if you ask me, they’re all very much optional… Except the onions! They’re very much not. Mushrooms and bell peppers have never really done it for me on a cheesesteak, they sort of mess up the texture in a slightly wet and watery way and draw away from the few, primal flavors of wheat, meat and cheese. The slightly sweet, slightly charred flavors of some properly caramelized onions, on the other hand, well, just do something for me….

And you can go ahead and call me out on my double standards here. Onions as a cheesesteak topping are not entirely historically traditional, I know, but if they’re good enough for many of the people of Philly, they’re good enough for The Johan! Oh, and hey, remember how the Italians say that once you start adding more than five ingredients to something is when you should start seriously considering what you’re doing lest you run the risk of fucking it all up? Well: Bread, meat, cheese, onions… That’s four, right? We’ve still got a very legit, very Italian sandwich on our hands, eh?

True comfort food! Whether it’s warm or cold outside, there is nothing like a juicy cheesesteak to satisfy your cravings!

Quick and simple-  Make this easy Philly cheesesteak recipe in 20 minutes! There is minimal chopping so the prep work is really just combining ingredients.  We also used DiLuigi’s Shaved Beef Steak which is pre-sliced and packaged which meant way less work for us. 

One pan! You’ll only have to use ONE pan for these authentic cheesesteaks. It doesn’t get any better than that!

Best Philly Cheese Steak Tips:

  1. Shave your beef with a mandoline for paper-thin beef pieces.
  2. Marinade the beef for 20 minutes to tenderize the meat.
  3. Use a griddle for this recipe! Its flat surface gets the job done for everything from sauteed onions to cooking the beef all in one unit! 
  4. The cheesesteak filling reheats well, so, make as many sandwiches as you need to serve them fresh and keep the filling inside a food container until needed. 
  5. Toast the bread rolls to soften up and heat the bread. 
  6. Saute the onions for under a minute, to get quick charr without carmelizing the onions. Some Philly Steak Restaurants serve their cheesesteaks with bits of white onions. The key is to have your griddle over high heat. 

Tips and Tricks

  • If you’re unable to find Steak-Umm or Gary’s Quick Steak, you can substitute chopped deli roast beef.
  • Don’t skip infusing the oil with garlic. The garlic adds an extra layer of flavor to the flatbread.
  • For best results, you should use a flatbread. However, I’ve also used a pre-baked pizza crust. Plain naan breads can be used, but they tend to be more for an individual serving.
  • If you want to reheat any leftover Philly cheesesteak flatbread, simply place the pieces on a baking sheet that’s been lined with aluminum foil or parchment paper (for easy clean up). Place the baking sheet in a cold oven. Turn the oven on to 350 degrees. Once the oven reaches 350 degrees, the flatbread will be perfectly reheated.

Bringing it All Together

As I mentioned earlier, onions are a must with my cheesesteaks. When you order a cheesesteak out, the onions are usually chopped and cooked separately until glossy and browned, then scooped on top of the meat to order. It’s important to note that these are not sweet buttery caramelized onions, but instead griddled onions that retain some of their texture and allium bite, and can hold up to the rich meat.

For my home version, I wanted to retain this “griddled” onion texture and flavor, but I found there was no need to cook the chopped onions separately. The onions reached proper doneness when tossed in and cooked through with the sliced steak. The onions, rib eye, and cheese end up well combined for one harmonious bite.

Have you noticed how burgers are usually eaten with a side of French Fries? It’s a classic pairing because they complement each other. Well, crispy and salty french fries are delicious not just with burgers but also with this Philly cheesesteak sandwich. 

Coleslaw, on the other hand, works well as a side dish because it’s light and refreshing. An American restaurant with international franchising called Hooters serves the sandwich with a side of coleslaw on its menu.

The potential guilt you feel will be offset by the vegetables in the coleslaw. We believe that there shouldn’t be guilt in the first place though, especially if you eat in moderation.

There are other side dishes you can choose to pair with the Philly Cheesesteak. For example, you could also have cheese sticks, onion rings, or potato wedges. The list goes on. 

Philadelphia and Their Cheese Culture!

People take their Philly cheesesteak very seriously. It’s one of the Philly classics.

I have been to Philly a number of times and always look for new places to try Philly cheesesteak sandwiches. Side note: Philadelphia is a really good food town. So many good places to eat with great recipes which is why I keep going back!

As for cheesesteaks, I did the Pat and Geno’s challenge and they were ok. Went to Campo’s and that was ridiculously good. Even found a great cheesesteak at the local Hilton. 

The point being, you can go many places in Philly and experience so many variations and delicious recipes for Philly cheesesteak sandwiches.

So, I guess I’m breaking the mold making a cheesesteak flatbread. But, this isn’t the first time I strayed from tradition and it won’t be the last!
